I’m new to squishing but with these oz’s I’m trying a new format.
First squish is 3g at 185f in a 37u bag. Depending on the return on that, I adjust. Since I got 20% out of that, I continued with that.
Second squish is 5g. Sometimes I’ll go up to 195f - 215f or use 160u bag...s. Or both. This time I stuck with the 185f 37u. Another 20% return.
Third I decided to bump up to 195f to see if I could get a touch more return. I think I got a bit more saucy 21%.
Fourth squish I did 10g, same temp and bags. Only 17.5% return, but BEAUTIFUL. That’s the hanging parchment shot shown.
Fifth squish was the last 5g. I this one I started at 195f and once I was at pressure, I went up to 215f. Gave it 30s at 215f and released. This gave me a 22% return
The sixth squish was all the previous squishes stacked together and squished at 215f for 3min. This gave me another 1.2g of product.
Caveat: My math is wrong and I know it. I didn’t document perfectly, so it’s more a feel of how the presses went rather than exact story.
How strict are y’all gonna be on this? I’m not going to remember this every time I post here as I post from sync, not from the website. So, I don’t see the sidebar, nor do I see any suggestions that may exist on the text submission page.
I ask this also because this comes across as re...ally over-bearing, and if that’s what this sub is, I’m probably not gonna post. I get that this is a good suggestion for titles to be helpful, but this text is kinda condescending.
